Legislation: Hygiene of Foodstuffs Regulations 2000 (S.I. No. 165 of 2000)
All food business proprietors should familiarise themselves with these Regulations which set out the statutory requirements in relation to food hygiene and premises It specifies the legal required standards that must be adhered to when manufacturing providing and distributing food for human consumption. It also serves as the basic criterion that an Environmental Health Officer will use to inspect a premises.

Food Safety Authority of Ireland
The principal function of the Food Safety Authority of Ireland (FSAI) is to take all reasonable steps to ensure that food produced, distributed or marketed in the State meets the highest standards of food safety and hygiene reasonably available and to ensure that food complies with legal requirements, or where appropriate with recognised codes of good practice.
