To help employers comply with the law, FHM provide high quality Basic Food Hygiene Training Courses, run by highly qualified
tutors with extensive experience and knowledge of the food industry. Training is provided at
various locations throughout the country on a regular basis. There is a limited
number of participants on each course to ensure individual attention. On successful
completion of a multiple choice examination, participants are eligible to receive
a Certificate issued by Environmental Health Officers Association. Training may
occur in workplace if suitable.
Staff Training - The Environmental Health Offices Association Course
Structure
The programme is of a 9 hour duration and it is divided into 2 x 4 hour modules followed up by a 1 hour exam. Each module is subdivided into individual sessions.
Objectives
The participants will gain the knowledge and skills necessary to allow them to carry out their duties in hygiene conscious manner.
Programme Content
- Basic Microbiology
- Food Contamination
- Food Safety Delivery, Intake storage
- Food Safety during preparation and cooking
- Structure of Building
- Cleaning
- Introduction to HACCP

Tutors
All tutors are licensed and approved by the Environmental Health Offices Association
Who Should Attend
The programme is designed for all management and supervisory who have direct or indirect responsibility for food safety in the Hospitality Industry including:
- Food and Beverage Staff in all sectors
- Catering staff
- Chefs and cooks
- Restaurant staff
- Bar Staff
Examination
All participants on this programme will be required to sit an examination. This examination will be of a 1 hour duration.
Certification
Candidates who are successful in the examination will receive a certificate awarded by the Environmental Health Offices Association Course.
